Description
Galangal has a ginger-like, lemony flavour that is somewhat reminiscent of camphor but is much milder, like ginger. Hildegard von Bingen in Europe often used this spice as a pepper substitute. It is a must in the Hildegard kitchen!
The scent of galangal is reminiscent of sweet mustard and ginger. Its flavour is spicy with a slight bitter note.
Tips & Preparation:
The Thai use galangal for almost all foods. It is usually used fresh, replacing ginger in curries, soups and stews. The Thai chicken soup Tom Kha Gai or the Indonesian Satay are always made with this spice.
