Ceylon Cinnamon has a comfortably spicy, sweet and floral flavour and is considered one of the best types of cinnamon in the whole world. Compared to conventional Cassia Cinnamon, which is mostly found in China and Indonesia, and is normally cheaper than Ceylon Cinnamon, often has a high content of coumarin. Coumarin has an unpleasant aftertaste that is bitter and herbal in flavour.
