What is Fleur de Sel?
Fleur de Sel is a precious, refined sea salt that occurs only rarely. Gourmets affectionately call it "the Queen of the salts" or the "caviar among salts". Fleur de Sel is naturally harvested and free of additives. It is also rich in valuable minerals and trace elements and is carefully harvested by hand in the Khoysan salt marsh on the west coast of South Africa .
Extracting Fleur des Sel needs experience, patience, sensitive hands, and a very special combination of sun, wind and water. The morning haze, light winds and the hot sun shape salt crystals in thin layers on the surface of the small salt water pools. All together, these elements create very fragile salt sheets, like a thin sheet of ice. Using special tools, Fleur de Sel is very carefully skimmed off by hand and stored in the sun in large baskets to dry. On good days, 50 kg of Fleur de Sel can be harvested, compared to about one ton of natural sea salt. Gentle hands sort the beautiful salt flakes.
Fleur de Sel is characterized by its unique flavor. It is mild, harmonious, and round .... a salt with finesse for fine dining. For cooking, it is a wonderful last touch for pasta, fish and vegetable dishes as well as for raw vegetables and salads.
